Ultralight Joe’s Moose Goo is a backpacker’s dream: calorie loaded gooey goodness is a squeeze tube. I tried out various versions of the original recipe to find the most palatable spread to keep me fueled on the trail. My friend Bobbi Lance has created her own high energy trail goo inspired by Samoa Girl Scout Cookies! This may be very dangerous for you to have in your house as it is so easy to eat by the spoonful. Don’t say I didn’t warn you!

 

Girl Scout Goo Recipe

16 oz coconut butter at room temp

7 oz coconut fat (coconut oil)

½-1 cup brown sugar

6 oz mini chocolate chips

2 cups unsweetened coconut flakes

8 oz no refrigeration caramel ice cream topping

½ teaspoon salt
Mix all ingredients together, and store in squeeze tube or plastic container with a screw top lid.

Store unrefrigerated, and enjoy on tortillas, pancakes, bread, granola bars, fruit, as a cookie spread or just by the spoonful.  This stuff packs a wallop for calories at 140 calories per tablespoon.

    Making some of this for an upcoming JMT thru-hike, thanks for posting the recipe!

    I have a quick question: what specific sort of caramel topping did you use? Everything in the grocery store said “Refrigerate after opening”; however, I know a lot of things labeled that way (eg Babybel cheese, many types of salami) are just fine for weeks. Is caramel topping basically the same?

      I apologize for the delayed response- I was on vacation! I have used caramel sauce (the one found with other ice cream toppings) after not keeping it in the fridge. With the amount of junk they put in that stuff, you should be fine. With a quick search I found this caramel sauce that is shelf stable but only comes in a large container. Let me know how the girl scout goo turns out!!
